Mango Cheesecake Recipe – How to make mango Cheesecake at Home?

Today we are going to make a splendid desert made with the mango which is rightfully known as a “King of Fruits”. Many vegetarians don’t like to eat egg based cake so today we come-up with cheesecake which will be made with the help of mango.

Ingredients:

For Crust:

  • 160 grams digestive biscuits
  • 100 grams salted chopped butter

For Filling:

  • 160 grams powdered sugar
  • 800 grams thick full cream yogurt
  • 400 grams cheese
  • 1 and 1/2 cups water
  • 10 grams China grass or Agar Agar
  • 2 mangoes, peeled, chopped
  • 1 teaspoon vanilla extract

For the Mango Glaze:

  • 1 Mango, peeled and chopped
  • 2 tablespoon water
  • 2 tablespoon sugar
  • 1 tablespoon lime juice

Direction:

  • Firstly take 160 grams digestive biscuits and put it in a polybag and crust it into a fine powder. Now transfer crust biscuits in a bowl.
  • Take 100 grams of cold butter and cut it in cubes. Put cube butter in crust biscuits. This needs to be mixed together. You can mix it with pastry blender.
  • Take a 8 inch of deep round spring form pan and now transfer the buttery biscuits mixture into pan. Press the mixture into base of pan. And now this needs to chill in refrigerator for above 30 minutes.
  • Take out biscuit mixture from refrigerator and put beautiful mango mixture into this.
  • Now this needs to chill in refrigerator about an hour.
  • Now all you do need to put a half of cup mango pureed, 2 tablespoon sugar, 2 tablespoon water, 1 table spoon of lime juice and now heat it over the gas until sugar and mango are mixed nicely.
  • Now spread this mixture over the mango cheesecake and keep it into refrigerator for 2 hours to allow it to set.

For Filling Direction:

  • Take china grass and soaked it in ½ cup of water for 15 minutes.
  • Now put 800 grams thick full cream yogurt, 400 grams crumbed paneer cheese, 200 grams of powdered sugar into blender and now mix it all together in a smooth pace.
  • Transfer the mixture into a big bowl and put 1 teaspoon vanilla extract into the mixture and mix it quite nicely.
  • Now put china grass soak water over gas and heat it until it is melt completely in water and put it in chopped mango. Now put the mango mixture into yogurt and cheese mixture.
