Traditional Carrot Cake recipe:
- 6 cups grated carrots
- 1 cup brown sugar
- 1 cup raisins
- 4 eggs
- 1 ½ cups white sugar
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup crushed pineapple
- 3 cups flour(maida)
- 1 ½ tsp baking powder
- 1 tsp salt
- 4 tsp ground cinnamon
- 1 chopped walnut
Step 1- In a bowl mix carrots and sugar. Set aside for 60 min. preheat the oven at 170 degree C and greased the baking pan with oil and little flour.
Step 2- In a large bowl beat in eggs, sugar, butter and vanilla. Add flour, baking powder, cinnamon powder and baking soda. Stir in carrots and pecans.
Step 3- Bake the cake for 40-50 min or until the toothpick inserted in the centre comes out clean. Cool the cake after baking.
- In bowl combine butter, cream cheese, vanilla and sugar. Beat, till soft peaks form.
- Apply the frosting on the cooled cake and enjoy happy eating.
